Fairmont Maldives Sirru Fen Fushi announced a special culinary programme for the festive season, welcoming three celebrated Michelin-recognised chefs to the island. Throughout December and January, chefs Alexandre Demand, Mickael Viljanen, and Alfredo Russo were invited to create exclusive degustation menus for guests staying at the resort.
Each chef brought their own culinary style and background to the programme, offering visitors a chance to experience internationally recognised gastronomy while celebrating the festive period in the Maldives.
Alexandre Demand
French chef Alexandre Demand is known for his work across several Michelin-starred restaurants in France. A graduate of the Paul Augier Hotel School in Nice, Demand has developed a reputation for exploring modern interpretations of international cuisine.
At the time of the event, he was leading the culinary direction at Oxygen Dining Room at Cross Chiang Mai Riverside Hotel in Thailand, where he focused on combining Thai ingredients with French culinary techniques.
During his time at Fairmont Maldives, Demand presented a six-course degustation menu at the Azure restaurant over Christmas, followed by a special New Year’s Eve dining experience at Kata, the resort’s overwater Japanese restaurant.
Mickael Viljanen
Joining the festive programme over New Year’s, Mickael Viljanen is one of only four chefs in Ireland to hold two Michelin stars.
Viljanen is the Chef-Patron of Chapter One in Dublin, a restaurant widely recognised for its refined approach to contemporary European cuisine.
Originally from Finland, Viljanen moved to Ireland in 2000 after working in kitchens across France and the United Kingdom. His cooking is known for combining seasonal Irish produce with subtle references to Finnish culinary traditions.
Guests at Fairmont Maldives had the opportunity to welcome the New Year with Viljanen’s six-course menu paired with international wines, served at the resort’s Azure restaurant.
Alfredo Russo
Italian chef Alfredo Russo joined the resort’s culinary programme in January. Known for combining modern cooking techniques with classic Italian cuisine, Russo has built a strong reputation across the global fine dining scene.
Russo opened his first restaurant, Dolce Stil Novo, in 1990. In 2004 he was recognised as Best Young Italian Chef by the Espresso Guide, and over the course of his career he has accumulated numerous Michelin recognitions.
His work has included collaborations with restaurants such as Gran Hotel et de Milan, as well as the publication of several cookery books. With multiple restaurants in his international portfolio, Russo has gained a global following for his culinary style.
During his residency at Fairmont Maldives, Russo presented a Michelin-inspired menu at the Azure restaurant, paired with a selection of wines for guests visiting the resort during the New Year period.
Dining at Fairmont Maldives Sirru Fen Fushi
Fairmont Maldives Sirru Fen Fushi features several dining venues across the island, including Azure, which specialises in seafood, Raha, which serves Maldivian cuisine, and Kata, an overwater restaurant offering Japanese-inspired dishes.
The resort also includes the Onu Onu cocktail bar, located at the centre of the island, where guests can enjoy drinks while overlooking the lagoon.
